Frozen Apricot Salad
1 29-ounce can apricot halves
1 3-ounce package cream cheese
1 tablespoon lemon juice
1/4 cup sugar
1/4 cup dates, diced
1/3 cup chopped nuts
2 cups whipped cream
Drain apricots. Keep 3 tablespoons of the syrup. Beat cream cheese until smooth and then
add the syrup, lemon juice and sugar. Cut apricots in small pieces and add to cheese
mixture, along with dates and nuts. Fold in whipped cream. Pour into an 8 or 9-inch square
dish or container. Freeze. Makes 10-12 servings. Cut into squares before serving.
