Country Spinach Salad 1 10-ounce box of frozen chopped spinach 3/4 cup chopped celery 3/4 cup chopped green onions, using some of the tops 4 ounces shredded sharp Cheddar cheese 3 boiled eggs, with whites and yolks separated and chopped 1 teaspoon salt 1 teaspoon garlic powder 1 cup real mayonnaise Bacon bits Squeeze juice from spinach. Mix spinach, celery, onions, cheese, chopped egg whites, salt, garlic powder and mayonnaise. Press mixture into 9x13-inch baking dish. Crumble egg yolks and spread over spinach mixture, along with bacon bits. Cover tightly and store in refrigerator overnight before serving. |
