Baked Cottage Potatoes 4 pounds potatoes 1 large onion, chopped 1 green pepper, chopped Parsley flakes 4 slices bread, cubed 1 4-ounce jar pimientos chopped 3/4 pound processed cheese food, such as Velveeta, cubed Topping 3/4 cup milk 1 cup melted margarine Boil potatoes. Peel and dice. Mix all ingredients together and season to taste with salt and pepper. Place in 3-quart baking dish. Over the top of ingredients pour milk and melted margarine. Bake at 350 degrees for 45 minutes. |
