APPLE WALNUT CAKE

3 eggs, beaten
2 cups sugar
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
4 cups diced, peeled apples
1 cup chopped walnuts

In large mixing bowl, beat eggs, sugar, oil, and vanilla. Combine flour, baking soda, cinnamon, nutmeg, and salt. Mix into batter. Fold in apples and nuts. Spread into a 9x13-inch baking pan. Bake at 325 for 50-60 minutes. Cool before frosting.

FROSTING:

2 3-ounce packages cream cheese
1/4 cup butter or margarinE
1 1/2 cups powdered sugar
1/2 teaspoon vanilla
1/4 teaspoon black walnut flavoring

Combine all ingredients well. Whip until smooth. Spread over cake and sprinkle with additional chopped walnuts.
